Ingredients

  • 1 medium head of cauliflower, riced
  • 2 tablespoons olive oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce or tamari
  • Salt and pepper to taste

Instructions

  1. Start by ricing the cauliflower using a food processor or grater.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the riced cauliflower and mixed vegetables to the skillet, stirring well.
  5. Push the cauliflower mixture to one side of the skillet and pour the beaten eggs into the other side, scrambling them until cooked.
  6. Mix the scrambled eggs into the cauliflower and vegetables.
  7. Add soy sauce, salt, and pepper, stirring to combine all ingredients.
  8. Finally, stir in the chopped green onions and serve hot.
