- 1 cup grated carrots
- 1 cup grated zucchini
- 1/2 cup whole wheat flour
- 1/2 cup oats
- 1/2 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup Greek yogurt (for frosting)
- 1/4 cup lemon juice (for frosting)
- 1/4 cup powdered sugar (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, mix together the grated carrots, zucchini, flour, oats, honey, applesauce, and eggs until well combined.
- Add the baking powder, baking soda, cinnamon, and salt to the mixture and stir until just combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- While the bars are baking, prepare the lemon frosting by mixing Greek yogurt, lemon juice, and powdered sugar in a bowl until smooth.
- Once the bars are cooled, spread the lemon frosting on top and cut into squares.
