Ingredients

  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1/2 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup Greek yogurt (for frosting)
  • 1/4 cup lemon juice (for frosting)
  • 1/4 cup powdered sugar (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix together the grated carrots, zucchini, flour, oats, honey, applesauce, and eggs until well combined.
  3. Add the baking powder, baking soda, cinnamon, and salt to the mixture and stir until just combined.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. While the bars are baking, prepare the lemon frosting by mixing Greek yogurt, lemon juice, and powdered sugar in a bowl until smooth.
  7. Once the bars are cooled, spread the lemon frosting on top and cut into squares.
