Description

A comforting and hearty loaded baked potato soup perfect for winter.


Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced potatoes and cook for about 5 minutes.
  3. Stir in the flour and cook for another 2 minutes.
  4. Gradually add the broth, stirring constantly until the mixture thickens.
  5. Pour in the milk and bring to a simmer.
  6. Add the cheddar cheese, sour cream, and season with salt and pepper.
  7. Cook until the cheese is melted and the soup is heated through.
  8. Serve hot, topped with crumbled bacon and green onions.

Notes

  • For a vegetarian version, use vegetable broth and omit the bacon.
