- 4 large russet potatoes
- 1 cup black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado, diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream or Greek yogurt
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then rub with olive oil, salt, and pepper.
- Bake the potatoes for 45-60 minutes, or until tender.
- While the potatoes are baking, prepare the toppings: heat the black beans and corn in a saucepan over medium heat.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut the potatoes in half and fluff the insides with a fork.
