Ingredients

  • 4 large russet potatoes
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then rub with olive oil, salt, and pepper.
  3. Bake the potatoes for 45-60 minutes, or until tender.
