A rich and creamy loaded potato soup topped with crispy bacon, cheese, and green onions.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the chopped onion until translucent.
  2. Add the diced potatoes and chicken broth, and bring to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Use a potato masher to mash some of the potatoes for a creamy texture.
  5. Stir in the heavy cream and shredded cheddar cheese until melted and combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with crumbled bacon and chopped green onions.

Notes

  • For a vegetarian version, use vegetable broth and omit bacon.
  • Can be made ahead and reheated; add a little more broth if it thickens too much.
  • Top with additional cheese and sour cream for extra flavor.
