Description
A rich and creamy loaded potato soup topped with crispy bacon, cheese, and green onions.
Ingredients

- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- In a large pot, sauté the chopped onion until translucent.
- Add the diced potatoes and chicken broth, and bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use a potato masher to mash some of the potatoes for a creamy texture.
- Stir in the heavy cream and shredded cheddar cheese until melted and combined.
- Season with salt and pepper to taste.
- Serve hot, topped with crumbled bacon and chopped green onions.
Notes
- For a vegetarian version, use vegetable broth and omit bacon.
- Can be made ahead and reheated; add a little more broth if it thickens too much.
- Top with additional cheese and sour cream for extra flavor.
