- 4 medium sweet potatoes
- 6 slices of bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- While the sweet potatoes are baking, cook the bacon in a skillet until crispy. Remove and crumble.
- Once the sweet potatoes are cool enough to handle, cut them in half lengthwise and scoop out some of the flesh, leaving a thin layer.
- Brush the skins with olive oil, season with salt and pepper, and return to the oven for 10-15 minutes until crispy.
- Fill the skins with crumbled bacon, shredded cheese, and return to the oven until the cheese is melted.
- Top with sour cream and chopped green onions before serving.
