- 4 large bell peppers
- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat and cook the ground meat until browned.
- Add black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine and cook for an additional 5 minutes.
- Stuff each bell pepper with the meat mixture and place them in a baking dish.
- Top each stuffed pepper with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted.
- Serve hot and enjoy!
