Loaded Taco Stuffed Peppers are a delicious and healthy twist on traditional tacos, featuring bell peppers filled with a savory mixture of ground meat, beans, cheese, and spices.


Ingredients

  • 4 large bell peppers
  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat and cook the ground meat until browned.
  4. Add black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine and cook for an additional 5 minutes.
  5. Stuff each bell pepper with the meat mixture and place them in a baking dish.
  6. Top each stuffed pepper with shredded cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted.
