Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 4 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix maple syrup, Dijon mustard, soy sauce, garlic powder, onion powder, and black pepper to create the glaze.
  3. Place the chicken breasts in a baking dish and pour half of the glaze over them.
  4. In another bowl, toss the cubed sweet potatoes with olive oil and salt.
  5. Spread the sweet potatoes around the chicken in the baking dish.
  6. Drizzle the remaining glaze over the sweet potatoes.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  8. Serve warm, drizzling any remaining glaze over the dish.
