- 4 sheets of matzo, broken into pieces
- 1 cup rolled oats
- 1/2 cup nuts (almonds, walnuts, or pecans), chopped
- 1/2 cup dried fruit (raisins, cranberries, or apricots)
- 1/4 cup honey or maple syrup
- 1/4 cup vegetable oil or coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the broken matzo, rolled oats, nuts, and dried fruit.
- In a separate bowl, mix together the honey, oil, vanilla, cinnamon, and salt.
- Pour the wet mixture over the dry ingredients and stir until everything is well coated.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through, until golden brown.
- Remove from the oven and let it cool completely before storing in an airtight container.
