Ingredients

  • 4 sheets of matzo, broken into pieces
  • 1 cup rolled oats
  • 1/2 cup nuts (almonds, walnuts, or pecans), chopped
  • 1/2 cup dried fruit (raisins, cranberries, or apricots)
  • 1/4 cup honey or maple syrup
  • 1/4 cup vegetable oil or coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the broken matzo, rolled oats, nuts, and dried fruit.
  3. In a separate bowl, mix together the honey, oil, vanilla, cinnamon, and salt.
  4. Pour the wet mixture over the dry ingredients and stir until everything is well coated.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through, until golden brown.
  7. Remove from the oven and let it cool completely before storing in an airtight container.
