Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup matzo meal
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup vegetable oil for frying

Instructions

  1. Preheat the oven to 200°F (95°C) to keep the chicken warm.
  2. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with matzo meal mixed with garlic powder, onion powder, salt, and pepper.
  3. Coat each chicken breast in flour, then dip in the egg, and finally coat with the matzo meal mixture.
  4. Heat vegetable oil in a large skillet over medium heat.
  5. Fry the chicken cutlets for about 4-5 minutes on each side, or until golden brown and cooked through.
