Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 6 cups beef broth
- 1 can diced tomatoes (14.5 oz)
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 cup pasta (optional)
- Fresh parsley for garnish
Instructions
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring beef broth to a boil.
- Add the meatballs to the boiling broth and cook for about 10 minutes.
- Add diced tomatoes and mixed vegetables to the pot.
- If using, add pasta and cook until tender, about 8-10 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- For a healthier version, use ground turkey instead of beef.
- Feel free to add any vegetables you have on hand.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
