Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 6 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 cup pasta (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, bring beef broth to a boil.
  3. Add the meatballs to the boiling broth and cook for about 10 minutes.
  4. Add diced tomatoes and mixed vegetables to the pot.
  5. If using, add pasta and cook until tender, about 8-10 minutes.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For a healthier version, use ground turkey instead of beef.
  • Feel free to add any vegetables you have on hand.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
