Ingredients

- 1 head of cabbage
- 1 can of chickpeas (15 oz), drained and rinsed
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Remove the core from the cabbage and carefully separate the leaves.
- In a bowl, combine chickpeas, olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Mix well until chickpeas are evenly coated with the seasoning.
- Take a cabbage leaf and fill it with a portion of the chickpea mixture.
- Wrap the leaf around the filling and secure it with a toothpick if necessary.
- Repeat with remaining leaves and filling.
- Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add red pepper flakes to the chickpea mixture.
- These wraps can be made ahead of time and stored in the refrigerator.
- Serve with a side of tzatziki sauce for dipping.
