Description

Mediterranean Cabbage Wraps filled with flavorful lemon-herb chickpeas, perfect for a healthy and delicious meal.


Ingredients

Scale
  • 1 head of cabbage
  • 1 can of chickpeas (15 oz), drained and rinsed
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Remove the core from the cabbage and carefully separate the leaves.
  2. In a bowl, combine chickpeas, olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  3. Mix well until chickpeas are evenly coated with the seasoning.
  4. Take a cabbage leaf and fill it with a portion of the chickpea mixture.
  5. Wrap the leaf around the filling and secure it with a toothpick if necessary.
  6. Repeat with remaining leaves and filling.
  7. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add red pepper flakes to the chickpea mixture.
  • These wraps can be made ahead of time and stored in the refrigerator.
  • Serve with a side of tzatziki sauce for dipping.
