- 1 cup sour cream
- 1 cup mayonnaise
- 1 cup cotija cheese, crumbled
- 1/2 cup cilantro, chopped
- 1/4 cup lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheese (cheddar or Monterey Jack)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine corn, sour cream, mayonnaise, cotija cheese, cilantro, lime juice, chili powder, garlic powder, salt, and black pepper.
- Mix well until all ingredients are evenly combined.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños to the mixture.
