- 4 cups fresh corn kernels (about 6 ears of corn)
- 2 tablespoons butter
- 1/2 cup mayonnaise
- 1/2 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 teaspoon chili powder
- Salt to taste
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the corn kernels and cook until tender, about 5-7 minutes.
- Remove from heat and let cool slightly.
- In a large bowl, combine the cooked corn, mayonnaise, cotija cheese, cilantro, lime juice, chili powder, and salt.
- Toss until well combined and serve warm or at room temperature.
Notes
- For a spicier version, add diced jalapeños.
- Can be served as a side dish or a snack.
