Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Grill the corn on medium-high heat until charred, about 10 minutes, turning occasionally.
  2. Let the corn cool slightly, then cut the kernels off the cob.
  3. In a large bowl, combine the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  4. Add the corn kernels, cotija cheese, and cilantro to the bowl and mix well.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes
