Description

Millionaire’s Shortbread, also known as Caramel Squares, is a decadent dessert that features layers of buttery shortbread, rich caramel, and smooth chocolate, making it a beloved Irish favorite.


Ingredients

  • 1 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup brown sugar
  • 1/2 cup light corn syrup
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the flour and salt, mixing until a dough forms.
  4. Press the dough into the bottom of a greased 9×9 inch baking pan.
  5. Bake for 20 minutes or until lightly golden.
  6. In a saucepan, combine the sweetened condensed milk, brown sugar, and corn syrup. Cook over medium heat, stirring constantly until it thickens.
  7. Pour the caramel mixture over the baked shortbread layer and spread evenly.
  8. In a microwave-safe bowl, melt the chocolate chips and stir in the vanilla extract.
  9. Pour the melted chocolate over the caramel layer and spread evenly.
  10. Allow to cool completely before cutting into squares.

Notes

  • For a richer flavor, use dark chocolate instead of semi-sweet.
  • Store in an airtight container at room temperature for up to a week.
  • Chill in the refrigerator for easier cutting.
