Description

Mini Chicken Quesadillas are a quick and easy snack or meal option that is both delicious and satisfying.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 small flour tortillas
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning

Instructions

  1. In a bowl, mix the shredded chicken with salsa and taco seasoning.
  2. Heat olive oil in a skillet over medium heat.
  3. Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  4. Add a portion of the chicken mixture on top of the cheese.
  5. Sprinkle the remaining cheese over the chicken and fold the tortilla in half.
  6. Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  7. Repeat with the remaining tortillas and filling.
  8. Cut into wedges and serve warm.

Notes

  • Feel free to add vegetables like bell peppers or onions for extra flavor.
  • Serve with sour cream or guacamole for dipping.
  • These can be made ahead of time and reheated in the oven.
