Mini Chicken Quesadillas are a quick and easy snack or meal option that is both delicious and satisfying.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 small flour tortillas
- 1/2 cup salsa
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning
Instructions
- In a bowl, mix the shredded chicken with salsa and taco seasoning.
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
- Add a portion of the chicken mixture on top of the cheese.
- Sprinkle the remaining cheese over the chicken and fold the tortilla in half.
- Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Feel free to add vegetables like bell peppers or onions for extra flavor.
- Serve with sour cream or guacamole for dipping.
- These can be made ahead of time and reheated in the oven.
