Description

- 4 bolillo rolls
- 1 cup refried beans
- 1 cup shredded cheese (such as Oaxaca or mozzarella)
- 1 cup diced tomatoes
- 1/2 cup diced onions
- 1/4 cup chopped cilantro
- 1 jalapeño, diced (optional)
- Juice of 1 lime
- Salt to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the bolillo rolls in half lengthwise.
- Spread a generous layer of refried beans on each half.
- Top with shredded cheese.
- Place the bolillo halves on a baking sheet and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
- While the molletes are baking, prepare the pico de gallo by mixing diced tomatoes, onions, cilantro, jalapeño, lime juice, and salt in a bowl.
- Once the molletes are done, remove them from the oven and serve hot, topped with pico de gallo.
Notes
- For a spicier pico de gallo, add more jalapeño or a dash of hot sauce.
- Molletes can be served as a snack or a light meal.
- Feel free to customize the toppings with avocado or sour cream.
