Description

Molletes with Pico de Gallo is a delicious Mexican dish featuring toasted bolillo bread topped with refried beans and melted cheese, served with a fresh pico de gallo salsa.


Ingredients

  • 4 bolillo rolls
  • 1 cup refried beans
  • 1 cup shredded cheese (such as Oaxaca or mozzarella)
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • 1 jalapeño, diced (optional)
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the bolillo rolls in half lengthwise.
  3. Spread a generous layer of refried beans on each half.
  4. Top with shredded cheese.
  5. Place the bolillo halves on a baking sheet and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
  6. While the molletes are baking, prepare the pico de gallo by mixing diced tomatoes, onions, cilantro, jalapeño, lime juice, and salt in a bowl.
  7. Once the molletes are done, remove them from the oven and serve hot, topped with pico de gallo.
