Ingredients

  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup raisins
  • 1/2 cup almonds, slivered
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add chicken thighs, season with salt, pepper, and spices, and cook until browned.
  4. Stir in the rice, chicken broth, and raisins.
  5. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  6. Remove from heat and let it sit covered for 5 minutes.
  7. Fluff the rice with a fork, garnish with slivered almonds and fresh cilantro before serving.
