- 1 cup basmati rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1/2 tsp turmeric
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/2 cup raisins
- 1/2 cup almonds, slivered
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add chicken thighs, season with salt, pepper, and spices, and cook until browned.
- Stir in the rice, chicken broth, and raisins.
- Bring to a boil, then reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, garnish with slivered almonds and fresh cilantro before serving.
Notes
- For extra flavor, marinate the chicken in spices for a few hours before cooking.
