Ingredients

- 2 pounds prime rib roast
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 hoagie rolls
- 8 slices provolone cheese
- 4 cups beef broth
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
Instructions
- Preheat the oven to 350°F (175°C).
- Rub the prime rib roast with olive oil, salt, and pepper.
- Place the roast in a roasting pan and cook for about 1 hour, or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove the roast from the oven and let it rest for 15 minutes before slicing.
- In a saucepan, combine beef broth, sliced onion, minced garlic, and Worcestershire sauce. Bring to a simmer.
- Slice the hoagie rolls and layer with sliced prime rib and provolone cheese.
- Toast the sandwiches in the oven until the cheese is melted.
- Serve the sandwiches with the warm au jus for dipping.
Notes
- For a richer flavor, use homemade beef broth.
- Adjust the seasoning according to your taste.
- Leftover prime rib can be used for this recipe.
