Description

A delicious and refreshing dessert made with coconut milk and a vibrant raspberry swirl, perfect for warm days.


Ingredients

Scale
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/4 cup gelatin powder
  • 1 cup fresh raspberries
  • 2 tablespoons lemon juice
  • 1/2 cup water

Instructions

  1. In a saucepan, combine coconut milk and sugar over medium heat until sugar dissolves.
  2. Sprinkle gelatin over the mixture and stir until fully dissolved.
  3. In a blender, puree raspberries with lemon juice and water until smooth.
  4. Pour half of the coconut mixture into a mold and let it set in the refrigerator for 30 minutes.
  5. Swirl the raspberry puree into the remaining coconut mixture and pour it over the set layer.
  6. Chill for an additional 2 hours or until fully set.
  7. Cut into bars and serve chilled.

Notes

  • For a sweeter taste, adjust the sugar according to preference.
  • Make sure to use unsweetened coconut milk for best results.
  • Store leftovers in an airtight container in the refrigerator.
