- 1 cup coconut milk
- 1/2 cup sugar
- 1/4 cup gelatin powder
- 1 cup fresh raspberries
- 2 tablespoons lemon juice
- 1/2 cup water
Instructions
- In a saucepan, combine coconut milk and sugar over medium heat until sugar dissolves.
- Sprinkle gelatin over the mixture and stir until fully dissolved.
- In a blender, puree raspberries with lemon juice and water until smooth.
- Pour half of the coconut mixture into a mold and let it set in the refrigerator for 30 minutes.
- Swirl the raspberry puree into the remaining coconut mixture and pour it over the set layer.
- Chill for an additional 2 hours or until fully set.
- Cut into bars and serve chilled.
Notes
- For a sweeter taste, adjust the sugar according to preference.
- Make sure to use unsweetened coconut milk for best results.
- Store leftovers in an airtight container in the refrigerator.
