Description

A hearty and comforting beef stew that brings warmth and nostalgia to your dining table.


Ingredients

Scale
  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside. In the same pot, add onions and garlic, sauté until softened.
  4. Stir in the tomato paste, thyme, and bay leaf.
  5. Add the beef back to the pot along with the beef broth.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Add carrots and potatoes, and continue to simmer for another 30-40 minutes until vegetables are tender.
  8. Season with salt and pepper to taste before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • This stew can be made a day in advance for better flavor.
  • Serve with crusty bread for a complete meal.
