Ingredients

- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon Italian seasoning
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, carrots, and celery; sauté until vegetables are tender.
- Stir in Italian seasoning and cook for another minute.
- Add chicken broth and bring to a boil.
- Reduce heat and stir in heavy cream and shredded chicken.
- Add gnocchi and cook until they float to the top.
- Stir in fresh spinach and cook until wilted.
- Season with salt and pepper to taste before serving.
Notes
- For a lighter version, substitute heavy cream with half-and-half.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This soup can be frozen, but the texture of the gnocchi may change upon reheating.
