Description

One Pan Shakshuka with Potatoes is a comforting and hearty dish that combines eggs poached in a spicy tomato sauce with tender potatoes, all cooked in one pan for easy cleanup.


Ingredients

  • 2 medium potatoes, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (14 oz) diced tomatoes
  • 4 large eggs
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook until tender, about 10 minutes.
  3. Add onion, garlic, and bell pepper; sauté until softened.

  6. Make wells in the sauce and crack eggs into each well.
  7. Cover the skillet and cook until eggs are set to your liking.
  8. Season with salt and pepper, and garnish with fresh parsley before serving.
