A quick and delicious recipe for One-Pan Thai Chicken Meatballs that packs 26g of protein and can be prepared in under 30 minutes.

- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup chopped cilantro
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 teaspoon red pepper flakes
- 1 tablespoon olive oil
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 1/4 cup green onions, chopped
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, cilantro, garlic, ginger, soy sauce, fish sauce, lime juice, and red pepper flakes. Mix well.
- Form the mixture into meatballs, about 1 inch in diameter.
- Heat olive oil in a large skillet over medium heat.
- Add the meatballs to the skillet and cook for about 5-7 minutes, turning occasionally until browned and cooked through.
- Add bell peppers and broccoli to the skillet and stir-fry for an additional 5 minutes until vegetables are tender.
- Garnish with green onions before serving.
Notes
- For a spicier version, increase the amount of red pepper flakes.
- Serve with rice or noodles for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
