A quick and delicious recipe for One-Pan Thai Chicken Meatballs that packs 26g of protein and can be prepared in under 30 minutes.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped cilantro
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1/4 cup green onions, chopped

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, cilantro, garlic, ginger, soy sauce, fish sauce, lime juice, and red pepper flakes. Mix well.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the meatballs to the skillet and cook for about 5-7 minutes, turning occasionally until browned and cooked through.
  5. Add bell peppers and broccoli to the skillet and stir-fry for an additional 5 minutes until vegetables are tender.
  6. Garnish with green onions before serving.

Notes

  • For a spicier version, increase the amount of red pepper flakes.
  • Serve with rice or noodles for a complete meal.
