Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in the orzo and cook for 1-2 minutes.
  4. Add vegetable broth, cherry tomatoes, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is tender.
  6. Stir in fresh spinach until wilted.
