A delicious and healthy Paleo Sweet Potato Casserole that is naturally sweetened and guilt-free, perfect for any occasion.

- 4 large sweet potatoes, peeled and cubed
- 1/4 cup coconut milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup pecans, chopped
- 1/4 cup coconut flour
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the sweet potatoes in a large pot until tender, about 15-20 minutes.
- Drain and mash the sweet potatoes in a large bowl.
- Add coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes and mix well.
- In a separate bowl, combine chopped pecans and coconut flour.
- Spread the sweet potato mixture into a greased baking dish and top with the pecan mixture.
- Bake for 25-30 minutes until the top is golden brown.
- Let cool slightly before serving.
Notes
- For a nut-free version, omit the pecans or substitute with seeds.
- Can be made ahead of time and reheated before serving.
- Adjust sweetness by adding more or less maple syrup according to taste.
