Description

A delicious and healthy Paleo Sweet Potato Casserole that is naturally sweetened and guilt-free, perfect for any occasion.


Ingredients

Scale
  • 4 large sweet potatoes, peeled and cubed
  • 1/4 cup coconut milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped
  • 1/4 cup coconut flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the sweet potatoes in a large pot until tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Add coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes and mix well.
  5. In a separate bowl, combine chopped pecans and coconut flour.
  6. Spread the sweet potato mixture into a greased baking dish and top with the pecan mixture.
  7. Bake for 25-30 minutes until the top is golden brown.
  8. Let cool slightly before serving.

Notes

  • For a nut-free version, omit the pecans or substitute with seeds.
  • Can be made ahead of time and reheated before serving.
  • Adjust sweetness by adding more or less maple syrup according to taste.
