Description

A delicious and healthier alternative to traditional mashed potatoes, these Parmesan smashed carrots are packed with flavor and perfect for any dinner.


Ingredients

Scale
  • 2 pounds of carrots
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup butter
  • 1/4 cup milk
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Peel and chop the carrots into chunks.
  2. Boil the carrots in salted water until tender, about 15-20 minutes.
  3. Drain the carrots and return them to the pot.
  4. Add butter, milk, Parmesan cheese, salt, and pepper to the carrots.
  5. Smash the carrots with a potato masher until desired consistency is reached.
  6. Garnish with fresh parsley before serving.
