- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup pecans, chopped
- 1 cup light corn syrup
- ½ cup brown sugar
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a greased baking dish.
- In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Fold in chopped pecans.
- Pour the cheesecake mixture over the crust in the baking dish.
- In another bowl, mix corn syrup, brown sugar, and salt until combined, then pour over the cheesecake layer.
- Bake for 45-50 minutes or until set. Let cool before slicing.
Notes
- For a richer flavor, use toasted pecans.
- Serve chilled for the best texture.
- Can be topped with whipped cream or additional pecans if desired.
