Description

Deliciously moist pink velvet cupcakes topped with creamy and tangy cream cheese frosting.


Ingredients

  • 1 cup buttermilk
  • 2 large eggs

  • 1 tablespoon red food coloring

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the buttermilk, vanilla extract, and red food coloring.
  5. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fill the cupcake liners about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cupcakes cool completely before frosting.
  10. For the frosting, beat together cream cheese and butter until smooth, then add powdered sugar and vanilla extract, mixing until creamy.
  11. Frost the cooled cupcakes with the cream cheese frosting and enjoy!
