- 1.5 lbs pork tenderloin
- 1 cup apple cider
- 2 tbsp Dijon mustard
- 2 tbsp brown sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 large sweet potatoes
- 1/4 cup milk
- 2 tbsp butter
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix apple cider, Dijon mustard, brown sugar, salt, and pepper to create the glaze.
- Heat olive oil in a skillet over medium-high heat and sear the pork tenderloin on all sides until browned.
- Transfer the pork to a baking dish and brush with the apple cider glaze.
- Bake in the preheated oven for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
- While the pork is baking, peel and chop the sweet potatoes, then boil them until tender.
- Drain the sweet potatoes and mash them with milk, butter, and cinnamon until smooth.
- Let the pork rest for 5 minutes before slicing.
- Serve the sliced pork with sweet potato mash and drizzle with remaining glaze.
Notes
- For a spicier glaze, add a pinch of cayenne pepper.
- Ensure the pork is not overcooked to maintain juiciness.
- Sweet potato mash can be prepared ahead of time and reheated.
