Description

A delicious pork tenderloin dish glazed with apple cider, served with creamy sweet potato mash, perfect for fall.


Ingredients

  • 1.5 lbs pork tenderloin
  • 1 cup apple cider
  • 2 tbsp Dijon mustard
  • 2 tbsp brown sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 large sweet potatoes
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 tsp cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix apple cider, Dijon mustard, brown sugar, salt, and pepper to create the glaze.
  3. Heat olive oil in a skillet over medium-high heat and sear the pork tenderloin on all sides until browned.
  4. Transfer the pork to a baking dish and brush with the apple cider glaze.
  5. Bake in the preheated oven for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  6. While the pork is baking, peel and chop the sweet potatoes, then boil them until tender.
  7. Drain the sweet potatoes and mash them with milk, butter, and cinnamon until smooth.
  8. Let the pork rest for 5 minutes before slicing.
  9. Serve the sliced pork with sweet potato mash and drizzle with remaining glaze.

Notes

  • For a spicier glaze, add a pinch of cayenne pepper.
  • Ensure the pork is not overcooked to maintain juiciness.
  • Sweet potato mash can be prepared ahead of time and reheated.
