Ingredients

- 4 medium potatoes, diced
- 1 lb kielbasa, sliced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the garlic and cook for another minute.
- Stir in the diced potatoes and kielbasa.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and simmer until the potatoes are tender, about 20 minutes.
- Stir in the heavy cream and thyme, and season with salt and pepper.
- Serve hot and enjoy!
Notes
- For a thicker soup, mash some of the potatoes before adding the cream.
- Feel free to add other vegetables like bell peppers or corn.
