Description

A warm and creamy potato leek soup that embodies the essence of Irish comfort food.


Ingredients

  • 4 large leeks, cleaned and sliced
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and sliced leeks, cooking until softened.
  3. Stir in the diced potatoes and cook for a few minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer until the potatoes are tender.
