Ingredients

  • 1 cup pumpkin puree
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • 1/2 cup vegetable broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente.
  3. In a large bowl, mix together the pumpkin puree, ricotta cheese, garlic powder, onion powder, nutmeg, salt, and pepper.
  4. Add the cooked pasta to the pumpkin mixture and stir until well combined.
