Ingredients

- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp cloves
- 1 package refrigerated pie crusts
- 1 cup powdered sugar
- 2 tbsp milk
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix pumpkin puree, brown sugar, and spices until well combined.
- Roll out the pie crusts and cut them into rectangles.
- Place a spoonful of the pumpkin mixture on half of the rectangles.
- Top with another rectangle and seal the edges with a fork.
- Place the pop tarts on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
- In a separate bowl, mix powdered sugar, milk, and vanilla to make the glaze.
- Drizzle the glaze over the cooled pop tarts before serving.
Notes
- For a richer flavor, add a pinch of salt to the pumpkin filling.
- These pop tarts can be stored in an airtight container for up to 3 days.
