- 2 cups rolled oats
- 1 cup cottage cheese
- 1 cup milk (or dairy-free alternative)
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh raspberries
- 2 eggs
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, cottage cheese, milk, honey or maple syrup, vanilla extract, baking powder, and salt.
- In a separate bowl, whisk the eggs and then add them to the oat mixture.
- Gently fold in the fresh raspberries.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the top is golden and set.
- Let it cool slightly before serving.
