Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, cream together the butter and sugar until light and fluffy.
- Add the egg, red food coloring, and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are set.
- Let the cookies cool completely on a wire rack.
- In a separate bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth to make the frosting.
- Spread frosting on the flat side of one cookie and sandwich it with another cookie.
Notes
- Store cookies in an airtight container for up to a week.
- For a festive touch, sprinkle some red and white sprinkles on the frosting.
- Make sure the cookies are completely cooled before frosting to prevent melting.
