- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon cocoa powder
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 cup cream cheese frosting
- Fresh strawberries (for hats)
- Whipped cream (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, mix together the flour, sugar, baking soda, cocoa powder, and salt.
- In another bowl, combine the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
- Gradually add the wet ingredients to the dry ingredients and mix until just combined.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let the cupcakes cool completely before frosting.
- Pipe cream cheese frosting on top of each cupcake.
- Place a strawberry upside down on top of the frosting to create the Santa hat effect.
- Top with a dollop of whipped cream to finish the look.
