Instructions
- In a large saucepan, combine the Arborio rice, whole milk, sugar, and salt.
- Bring the mixture to a gentle boil over medium heat, stirring frequently.
- Reduce the heat to low and simmer, stirring occasionally, until the rice is tender and the mixture is creamy, about 20-25 minutes.
- Stir in the vanilla extract, ground cinnamon, and raisins (if using).
- Remove from heat and stir in the butter until melted and well combined.
- Let the pudding cool slightly before serving. It can be served warm or chilled.
