Description

Ingredients

  • 4 medium carrots
  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and trim the asparagus, and peel and slice the carrots.
  3. In a large bowl, combine the asparagus and carrots with olive oil, salt, pepper, garlic powder, and lemon juice.
  4. Toss until the vegetables are evenly coated.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
  7. Serve warm as a side dish for your Easter meal.
