A delicious and healthy roasted brassica bowl featuring cabbage and Brussels sprouts, drizzled with tahini for added flavor.
Ingredients

- 1 head of cabbage, chopped
- 2 cups Brussels sprouts, halved
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon maple syrup (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the chopped cabbage and halved Brussels sprouts with olive oil, salt, and black pepper.
- Spread the vegetables evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
- In a small bowl, whisk together tahini, lemon juice, and maple syrup (if using).
- Once the vegetables are done roasting, drizzle the tahini mixture over the top and serve warm.
Notes
- Feel free to add other vegetables like carrots or sweet potatoes for variety.
- This dish can be served warm or at room temperature.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
