- 1 lb carrots, peeled and cut into sticks
- 1/2 cup pecans
- 1/4 cup brown sugar
- 2 tbsp butter
- 4 oz goat cheese, crumbled
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the carrot sticks with olive oil, salt, and pepper.
- Spread the carrots on a baking sheet and roast for 25-30 minutes until tender.
- In a skillet, melt butter over medium heat, add pecans and brown sugar, stirring until the pecans are coated and caramelized.
- Remove the roasted carrots from the oven and top with candied pecans and crumbled goat cheese.
- Serve warm and enjoy!
