Description

Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 1/2 cup pecans
  • 1/4 cup brown sugar
  • 2 tbsp butter
  • 4 oz goat cheese, crumbled
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the carrot sticks with olive oil, salt, and pepper.
  3. Spread the carrots on a baking sheet and roast for 25-30 minutes until tender.
  4. In a skillet, melt butter over medium heat, add pecans and brown sugar, stirring until the pecans are coated and caramelized.
