Ingredients

- 2 cups of fresh herbs (parsley, basil, and mint)
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of diced potatoes
- 1 cup of diced carrots
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add diced potatoes and carrots, cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let simmer for 15 minutes or until vegetables are tender.
- Add the fresh herbs and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
