Description

A simple and delicious one pot recipe for Hoppin’ John, a traditional Southern dish made with black-eyed peas and rice.


Ingredients

  • 1 cup black-eyed peas
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 bay leaf
  • Salt to taste
  • 1 tablespoon olive oil

Instructions

  1. Rinse the black-eyed peas and soak them in water for at least 4 hours or overnight.
  2. In a large pot, heat olive oil over medium heat and sauté the onion, garlic, and bell pepper until softened.
  3. Add the soaked black-eyed peas, chicken broth, thyme, black pepper, bay leaf, and salt to the pot.
  4. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
  5. Add the rice to the pot, stir well, and cover. Cook for an additional 20 minutes or until the rice is tender.
