A simple and delicious one pot recipe for Hoppin’ John, a traditional Southern dish made with black-eyed peas and rice.

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 1 bay leaf
- Salt to taste
- 1 tablespoon olive oil
Instructions
- Rinse the black-eyed peas and soak them in water for at least 4 hours or overnight.
- In a large pot, heat olive oil over medium heat and sauté the onion, garlic, and bell pepper until softened.
- Add the soaked black-eyed peas, chicken broth, thyme, black pepper, bay leaf, and salt to the pot.
- Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
- Add the rice to the pot, stir well, and cover. Cook for an additional 20 minutes or until the rice is tender.
- Remove the bay leaf before serving. Enjoy your Hoppin’ John!

- For added flavor, you can include diced ham or sausage.
- Serve with cornbread for a complete meal.
