- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 bay leaf
- 2 tablespoons olive oil
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can diced tomatoes (14.5 oz)
Instructions
- Rinse the black-eyed peas and soak them in water overnight.
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion, garlic, carrot, and celery; sauté until softened.
- Add the soaked black-eyed peas, water, diced tomatoes, salt, pepper, smoked paprika, and bay leaf.
- Bring to a boil, then reduce heat and simmer for about 1 hour or until peas are tender.
- Remove the bay leaf before serving.
Notes
- For a spicier version, add diced jalapeños.
- This dish can be served as a main course or a side dish.
