Description
A traditional Polish dish, Bigos Stew, also known as Hunter’s Stew, is a hearty and flavorful meal made with a variety of meats, sauerkraut, and spices.

- 1 lb sauerkraut
- 1 lb fresh cabbage, chopped
- 1 lb pork shoulder, cubed
- 1 lb kielbasa, sliced
- 1 lb beef, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat and sauté the onions and garlic until translucent.
- Add the pork shoulder and beef, browning on all sides.
- Stir in the kielbasa and mushrooms, cooking for an additional 5 minutes.
- Add the sauerkraut, chopped cabbage, beef broth, tomato paste, paprika, caraway seeds, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for at least 1 hour, stirring occasionally.
- Adjust seasoning as needed and serve hot.
Notes
- For a richer flavor, let the stew sit overnight in the refrigerator and reheat before serving.
- Feel free to add other meats like smoked sausage or game meats for variation.
- Serve with crusty bread for a complete meal.
