Description

A traditional Polish dish, Bigos Stew, also known as Hunter’s Stew, is a hearty and flavorful meal made with a variety of meats, sauerkraut, and spices.


Ingredients

  • 1 lb sauerkraut
  • 1 lb fresh cabbage, chopped
  • 1 lb pork shoulder, cubed
  • 1 lb kielbasa, sliced
  • 1 lb beef, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onions and garlic until translucent.
  2. Add the pork shoulder and beef, browning on all sides.
  3. Stir in the kielbasa and mushrooms, cooking for an additional 5 minutes.
  4. Add the sauerkraut, chopped cabbage, beef broth, tomato paste, paprika, caraway seeds, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for at least 1 hour, stirring occasionally.
  6. Adjust seasoning as needed and serve hot.

Notes

  • For a richer flavor, let the stew sit overnight in the refrigerator and reheat before serving.
  • Feel free to add other meats like smoked sausage or game meats for variation.
