Ingredients

  • 1 pound black-eyed peas, dried
  • 1 cup long-grain rice
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 bay leaf
  • Salt to taste

Instructions

  1. Rinse and soak the black-eyed peas overnight.
  2. In a crock pot, combine the soaked black-eyed peas, rice, smoked sausage, onion, garlic, chicken broth, thyme, black pepper, and bay leaf.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or until the peas and rice are tender.
  5. Remove the bay leaf before serving.
  6. Adjust seasoning with salt if needed.

Notes

  • For a vegetarian version, omit the sausage and use vegetable broth.
  • This dish can be made ahead of time and reheated.
