- 1 cup dried black-eyed peas
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water and set aside.
- Turn on the Instant Pot and select the sauté function. Add olive oil and sauté the onion until translucent.
- Add garlic and cook for another minute.
- Add the rinsed black-eyed peas, vegetable broth, smoked paprika, cumin, bay leaf, salt, and pepper.
- Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
- Once the cooking time is complete, allow for a natural release for 10 minutes, then quick release any remaining pressure.
- Remove the bay leaf and stir the peas before serving.
Notes
- Soaking the peas overnight can reduce cooking time.
- Adjust spices according to your taste preference.
- Serve with rice or cornbread for a complete meal.
