Description

A quick and delicious recipe for savory black-eyed peas made in an Instant Pot, perfect for a hearty meal.


Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Rinse the black-eyed peas under cold water and set aside.
  2. Turn on the Instant Pot and select the sauté function. Add olive oil and sauté the onion until translucent.
  3. Add garlic and cook for another minute.
  4. Add the rinsed black-eyed peas, vegetable broth, smoked paprika, cumin, bay leaf, salt, and pepper.
  5. Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
  6. Once the cooking time is complete, allow for a natural release for 10 minutes, then quick release any remaining pressure.
  7. Remove the bay leaf and stir the peas before serving.

Notes

  • Soaking the peas overnight can reduce cooking time.
  • Adjust spices according to your taste preference.
