Instructions
- Break the matzo sheets into pieces and soak them in warm water for about 5 minutes.
- In a skillet, heat olive oil over medium heat and sauté the diced onion until translucent.
- Add the chopped spinach to the skillet and cook until wilted.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Drain the matzo and add it to the skillet with the onion and spinach, mixing well.
- Pour the egg mixture over the matzo and cook until the eggs are set, stirring occasionally.
- Fold in the smoked salmon just before serving.

- For a creamier texture, add a bit more milk to the egg mixture.
- Feel free to add other vegetables like bell peppers or mushrooms.
