Description

Ingredients

  • 4 matzo sheets
  • 2 cups fresh spinach, chopped
  • 1 medium onion, diced
  • 4 large eggs
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 ounces smoked salmon, chopped

Instructions

  1. Break the matzo sheets into pieces and soak them in warm water for about 5 minutes.
  2. In a skillet, heat olive oil over medium heat and sauté the diced onion until translucent.
  3. Add the chopped spinach to the skillet and cook until wilted.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper.
  5. Drain the matzo and add it to the skillet with the onion and spinach, mixing well.
  6. Pour the egg mixture over the matzo and cook until the eggs are set, stirring occasionally.
  7. Fold in the smoked salmon just before serving.
