Instructions
- Boil the cubed potatoes in salted water until tender, about 10 minutes.
- Drain the potatoes and mash them in a bowl.
- Add butter, salt, black pepper, and flour to the mashed potatoes. Mix until well combined.
- If using, fold in the chopped chives.
- Divide the mixture into equal portions and shape them into flat cakes.
- Heat a non-stick skillet over medium heat and add a little butter.
- Cook the potato cakes for about 3-4 minutes on each side, or until golden brown.
